    S'mores Rice Krispie Treats

    These S'mores Rice Krispie Treats are the perfect blend of marshmallow, chocolate, and graham cracker. They are basically a s'more in Rice Krispie treat form! 

    I have had the ingredients to make these s'mores Rice Krispie treats forever, so I have finally got around to making them. I have to say, I think I nailed this recipe on the first go around. They are the perfect blend of chocolate, marshmallow, and graham cracker. No flavor overpowers the other. I think you're going to like these!

    I've said it before, and I will say it again. I adore Rice Krispie treats. I could literally eat an entire tray in one sitting. While I think the store-bought version is good, I am talking about the homemade kind made with real butter and a little love.

    Ingredients in S'mores Rice Krispie Treats

    The classic s'more calls for two graham crackers, a layer of chocolate, and a layer of ooey-gooey marshmallow. I tried to replicate this ratio in these Rice Krispie treats, and I would like to think I nailed it.

    • Graham Cracker: In order to incorporate the graham cracker into these treats, this recipe calls for coarse crumbs. To achieve this, I find it easier to crush them in a zip-top plastic bag. This recipe requires a blend of crumbs and coarse graham cracker pieces for the full flavor effect.
    • Marshmallow: Obviously these are Rice Krispie treats, which already call for marshmallow. Since these are s'mores treats, the recipe requires an additional 1 cup of marshmallows added in with the dry ingredients. This gives the treats a lovely appeal and delicious pockets of melty marshmallow.
    • Chocolate: When creating this recipe, I wanted to ensure that the chocolate did not overwhelm the additional ingredients in these treats. My immediate thought was miniature chocolate chips. For this recipe, the chocolate chips are folded in with dry ingredients. This allows them to melt slightly. Like the added marshmallows, there are swirled pockets of chocolate throughout these treats.

    How to make cereal treats

    These treats are super easy to make. The hardest part is waiting for them to set so that you can dig in.

    1. In a large bowl, combine the Rice Krispie cereal, miniature chocolate chips, graham cracker crumbs, and one cup of the miniature marshmallows. Stir to combine and set aside.
    2. In a large pot, melt the butter. Add the remaining mini marshmallows and stir until they are completely melted and incorporated. Pour the marshmallow mixture over the dry ingredients. With a spatula, mix together until everything is well combined and coated.
    3. Pour the mixture into a greased 13-by-9-inch baking pan or onto a sheet of wax paper. With a greased spatula, evenly spread the mixture into an even layer and the shape of the pan. Allow them to set before cutting into squares.
