    Quesadillas are a delicious option for a quick lunch or dinner. Buffalo chicken quesadillas are one of my favorite things to make with leftover rotisserie chicken. They're easy to throw together and satisfying with their crispy shell, tangy buffalo flavor (thanks to hot sauce), and ooey-gooey melty cheese center. 

    This easy recipe perfectly transforms your leftover chicken into an easy dinner delight. Load tortillas with pre-cooked chicken smothered in tangy buffalo sauce and melted cheese. Much like the flavors in my Slow-Cooker Buffalo Chicken, these quesadillas have just enough spicy heat.

    Exploding with flavor, the zesty buffalo chicken and ooey-gooey cheese are irresistible. This easy recipe turns leftover rotisserie chicken into a mouth-watering meal that the whole family will love.     Cheesy Buffalo Chicken Quesadillas

    • This buffalo chicken quesadilla recipe is perfect for any day of the week or game day.

    Ingredients

    The ingredients needed for this recipe.
    • 10-inch Flour Tortillas – These are burrito-sized tortillas. 
    • Cheese – This recipe calls for two types of shredded cheese: cheddar cheese and provolone. 
    • Shredded, Cooked Chicken (rotisserie or homemade) - Making quesadillas at home is a great way to use up leftover rotisserie chicken. Or use shredded chicken breast, boiled or cooked in the crockpot.
    • Frank’s RedHot Sauce – This is my go-to hot sauce. It is perfect for buffalo-style recipes such as this one. 
    • Ranch Dressing
    • Green Onions - If you do not have green onions, use minced white or red onions instead. 
    • Fresh Cilantro (optional)
    • Avocado Oil – Or your favorite neutral-flavored oil, like canola. 
    • Sour Cream or Greek Yogurt – For service.

    Step-By-Step Instructions

    Combine the ingredients to make the filling.

    Divide the filling between the two tortillas.

    STEP 1 - Combine all ingredients {except the tortillas and oil} in a large bowl. 

    STEP 2 - Divide the buffalo chicken mixture between the two tortillas and spread over one half of each flour tortilla. Fold the opposite side {of each tortilla} over and gently press down. 

    STEP 3 - Heat the avocado oil in a large nonstick pan over medium heat. Cook until each side is golden brown and the cheese has melted. 

    Ingredient Substitutions

    • Cheese - Mozzarella Cheese, Mexican Cheese Blend, Monterey Jack Cheese
    • Frank's Red Hot Sauce - Buffalo Wing Sauce
    • Ranch Dressing - Blue Cheese Dressing

    Variations

    Keto - Swap the flour tortillas for burrito-sized carb-balance tortillas.

    Suggested Equipment

    • Cutting Board
    • Large Skillet
    • Kitchen Shears or a Pizza Cutter to cut the quesadillas into slices

    Use high-heat cooking oils like avocado, canola, or vegetable oil. You can also use ghee, butter, or olive oil too.

    Ingredients
      

    • 2 10-inch flour tortillas
    • 1 cup shredded, cooked chicken rotisserie or homemade
    • ¼ cup Franks RedHot Sauce
    • 1 tablespoon ranch dressing
    • 2 tablespoon scallions  diced
    • 1 tablespoon fresh cilantro (optional) chopped
    • ½ cup shredded cheddar cheese
    • ½ cup shredded provolone cheese
    • 2 teaspoon avocado oil
    • sour cream or Greek yogurt for service

    Instructions
     

    • In a large bowl, combine the chicken, hot sauce, ranch dressing, scallions, cilantro (if using), and cheese. 
    • Divide the chicken mixture between the two tortillas and spread over one half of each tortilla. Fold the opposite side {of each tortilla} over and gently press down. 
    • Heat the oil in a large nonstick pan over medium heat. Transfer the filled tortillas into the pan. Cook until each side is golden brown, and the cheese has melted. 
    • Remove from the heat. Allow the quesadillas to cool for a few minutes before cutting into slices. Serve with sour cream or Greek yogurt.
