    This recipe combines fresh strawberries, whipped cream, and marshmallows like strawberry fluff salad. Unlike other fluff recipes, this version includes rich cream cheese and homemade whipped cream instead of cool whip. These additions mean a richly flavored dessert with a creamy, fluffy consistency and a flavor reminiscent of strawberry cheesecake. 

    Cheesecake fluff has all the goodness of cheesecake filling without all of the extra work and time. It comes together quickly and requires only seven ingredients. Here is why you will love this strawberry fluff:

    Ingredients

    • Heavy Whipping Cream - The cream needs to be cold for whipping. 
    • Powdered Sugar - The sugar sweetens the whipped cream.
    • Pure Vanilla Extract - Vanilla extract amplifies the flavor.
    • Cream Cheese - Soften the cheese at room temperature. 
    • Strawberry Preserves - Use store-bought or homemade preserves.
    • Fresh Strawberries - Cut the fruit into small bite-sized pieces. Reserve extra whole strawberries for garnish, if desired. 
    • Mini Marshmallows - The mini marshmallows soften in the fluff creating a delightful texture.

    Instructions

    Add strawberries and marshmallows to the whipped cream-cream cheese mixture.
    Fold the strawberries and marshmallows in.
    1. Whipped Cream: Whip the heavy cream in a large bowl until soft peaks using an electric mixer. Next, add the sifted powdered sugar and vanilla extract. Whip until stiff peaks have formed. Transfer the whipped cream to a separate bowl.
    2. Cream Cheese Mixture: Whip the cream cheese and strawberry preserves in the same large mixing bowl with the same whisk attachment (no need to rinse) until light and fluffy.
    3. ​Carefully fold the whipped cream into the cream cheese mixture using a rubber spatula. (Reserve ¼ of the whipped cream for garnish.)
    4. ​Gently fold the marshmallows and strawberry pieces into the cream mixture.
    5. Chill & Serve: Cover the bowl with plastic wrap and chill the fluff in the fridge for 2 hours. Serve with the remaining whipped cream and additional fresh strawberries.

    Variations

    • Keto - Substitute powdered erythritol for the powdered sugar. Use store-bought or homemade sugar-free (keto-friendly) strawberry jam. Omit the marshmallows or use keto marshmallows. 
    • Chocolate Chip - Mix ½ cup of mini semi-sweet chocolate chips into the fluff.

    Storage

    Transfer leftover strawberry fluff into individual servings covered in plastic wrap or store it all together in an airtight container in the refrigerator. Cheesecake fluff will last up to 3 days. It will start to lose its shape and texture after the third day.

    Expert Tips

    1. Place your stainless mixing bowl and whisk attachment in the fridge or freezer. Likewise, make sure that your heavy whipping cream is cold. 
    2. The cream cheese should be at room temperature to avoid any lumps of cheese in the final product. Pull the cream cheese out of the fridge an hour before making this dessert. 
    3. Sift the powdered sugar to prevent lumps.

    How far can this cheesecake fluff be made in advance?

    For best results, serve this strawberry cheesecake fluff the same day it's made. The fresh strawberries inside will start to weep, and the marshmallows will dissolve as they sit. For this reason, at most, this fluff can be made one day in advance.

    Can you freeze strawberry fluff?

    You can freeze strawberry fluff in a freezer-safe container for up to 3 months. The texture will not be the same, though, after it thaws.

      Can I use cool whip instead of whipping cream. If so would it be a whole 8oz container?

        Yes, you can. Use on 8oz container of Cool Whip (about equivalent to the 1 1/2 cups whipping cream once whipped). Skip step one and omit the 1/4 cup powdered sugar.
