    When I want a sweet but wholesome breakfast, I always think of oatmeal. This baked oatmeal with strawberries is not only yummy but easy to make. A delicious blend of oats, brown sugar, almonds, cinnamon, and fresh strawberries bakes in the oven for just thirty-five minutes.

    The result is delightfully sweet, wholesome baked oatmeal. The almonds add a nice crunch and additional protein, while the strawberries bring a subtle tartness. The flavor is comforting and keeps you wanting more.

    Ingredients

    The ingredients you need for this recipe.
    • Rolled Oats
    • Light Brown Sugar (packed)
    • Ground Cinnamon
    • Baking Powder
    • Salt
    • Milk - Use whole, oat, almond, or coconut milk.
    • Egg (room temperature)
    • Pure Vanilla Extract
    • Unsalted Butter (melted)
    • Strawberries (sliced or diced)
    • Almonds (chopped)

    Instructions

    1 - Preheat the oven to 375° F. Grease an 8x8-inch baking dish with cooking spray and set it aside.

    Stir the oats, brown sugar, salt, baking powder, and cinnamon.
    The liquid ingredients in a measuring cup.
    Mix the milk, egg, and vanilla.

    2 - In a large bowl, mix the oats, baking powder, salt, brown sugar, and ground cinnamon.

    3 - Whisk together the milk, egg, and vanilla extract in a medium-sized bowl.

    Pour the wet ingredients into the oat mixture.

    Stir until combined.

    4 - Pour the milk-egg mixture and melted butter into the bowl with the oat mixture and stir to combine. 

    5 - Stir in the strawberries and almonds just until incorporated.

    Pour into the prepared baking dish and bake.

    PRO TIP: Top the oatmeal with extra strawberry slices and chopped almonds for added visual appeal.

    6 - Carefully pour the mixture into the prepared dish. Bake for 35 - 40 minutes until the top of the oatmeal is golden brown and the oatmeal is set.

    Substitutions

    • Light Brown Sugar - Monkfruit sweetener, stevia, maple syrup, or granulated sugar
    • Unsalted Butter - Neutral-flavored oil or coconut oil
    • Vanilla Extract - Almond Extract
    • Almonds - Pecans, walnuts, or omit altogether

    Variations

    • Add semi-sweet or white chocolate chips.
    • Use different types of berries like blueberries, blackberries, or raspberries.
    • Reduce the milk by roughly a third and add mashed banana.
    • Top with cream cheese icing.

    Storage

    • STORE - Cover the pan in foil or store slices in an airtight container in the refrigerator for up to 4 days.
    • FREEZE -  Portion out the baked oatmeal into {6} slices, or desired amount of slices. Wrap slices individually or transfer to a freezer-safe container (or zip-top bag). Freeze for up to 3 months.
    • REHEAT - Place a slice of baked oatmeal onto a microwave-safe dish. Cover and heat for 45 seconds - one minute. Serve warm with maple syrup or almond butter.

    Expert Tips

    1. Reserve a few extra strawberry slices and almonds for garnishing the oatmeal before baking.
    2. Make sure that your baking powder is fresh. Most of us do not use the full can of baking powder before its expiration date. Make sure that your powder has not expired.
    3. Slice ahead of time for easy breakfasts. Slice the oatmeal ahead for a ready-to-go breakfast.

    What to Serve with Baked Oatmeal

    Serve warm or cold.

    Frequently Asked Questions

    How do you know when baked oatmeal is done?

    The top of the oatmeal will be golden brown and the interior will no longer jiggle.

    Can I use quick-cooking oats in this recipe?

    While I prefer rolled oats in this recipe, quick-cooking oats can be used as well. Keep in mind that the baking time may vary. *Do not use steel-cut oats in this recipe.

    Can I use frozen strawberries in baked oatmeal?

    Yes, frozen strawberries can be used. If using frozen strawberries. use them straight from the freezer. Do not thaw the berries prior to adding them in with the other ingredients. Keep in mind that the baking time will vary if using frozen berries.
