    This "pasta" variation is derived from hearts of palm. Hearts of palm are made from the core of palm trees. Their flavor profile and texture are similar to artichokes. Typically, you will see them used in salads, but throughout recent years, they have been cut and cooked to resemble pasta. 

    Is hearts of palm pasta healthy? This low-carb pasta alternative is low in calories, keto, and gluten-free. This keto diet-friendly pasta has only 2g of net carbs per serving, which is a significant difference from regular noodles. It is a great option for those with restricted diets or allergies. It has a similar texture to zucchini noodles. The plant-based noodles are a suitable pasta substitute for most pasta sauces.

    Easy Hearts of Palm Pasta Recipe

    Unlike traditional pasta, hearts of palm noodles do not need to be boiled. This means fewer dishes, less labor, and quicker cooking. The low carb content and speedy cooking process make this hearts of palm pasta recipe ideal for when those pasta cravings hit.

    The recipe starts with a garlic-infused olive oil. Crushed red pepper flakes and blistered sweet cherry tomatoes add additional flavor. Salty parmesan cheese and crispy fried onions finish this easy hearts of palm spaghetti dish.

    Ingredients

    • Hearts of Palm Noodles: Swap hearts of palm pasta for other veggie noodles like zucchini or carrot spirals.
    • Olive Oil: Olive oil is the star of the sauce, so you'll want to use a good quality extra-virgin olive oil such as Cuac. 
    • Garlic (thinly sliced): The garlic is lightly fried in olive oil, providing a beautiful aromatic.
    • Cherry Tomatoes: If you can find the trio of colors, they look beautiful in this pasta dish. However, red cherry tomatoes are equally as beautiful.
    • Red Pepper Flakes: Crushed red pepper flakes add a subtle heat that complements the garlic.
    • Grated Parmesan
    • Crispy Fried Onions: The onions are garnish but add a lovely textural element to this dish.

    Instructions

    1. Prepare pasta according to package instructions. Heat in a saucepan or microwave.
    2. In a large nonstick skillet, heat the olive oil over medium heat. Add the garlic and cook until almost golden, keeping a watchful eye not to burn it. Stir in the red pepper flakes. Carefully add the tomatoes, and cook until tender and slightly blistered, about 6 minutes. 
    3. Add the drained noodles and toss to coat. Next, add the 2 tbsp Parmesan cheese and toss until incorporated. Remove from the heat. Garnish with the fried onions and additional Parmesan cheese.

    • Fresh Herbs: Mix in chopped herbs like fresh basil or Italian parsley after removing the pasta from the heat.
    • Protein: Top pasta servings with grilled chicken strips or cooked shrimp.
    • Optional Mix-Ins: For a heartier bowl of pasta, add in artichoke hearts or sliced roasted red peppers.

    Storage

    Transfer leftover pasta to an airtight container and store it in the refrigerator for up to 2 days.

    Ingredients
      

    • 12 oz hearts of palm pasta I used Trader Joe's brand.
    • ¼ cup olive oil
    • 2 cloves garlic thinly sliced
    • 1 cup cherry tomatoes sliced in half
    • ¼ teaspoon red pepper flakes
    • 2 tablespoon grated Parmesan cheese plus more for garnish
    • 3 tablespoon fried onions for garnish

    Instructions
     

    • Prepare hearts of palm pasta according to package instructions. Heat in a saucepan or microwave.
