Funfetti Cake Mix Cookies

These easy funfetti cake mix cookies have crinkly tops and soft, chewy centers. The sprinkle-filled cookies have a sweet, nostalgic funfetti flavor. This recipe requires only five ingredients and is ready in minutes.

Ingredients
  

  • 15.25 oz box of funfetti cake mix
  • 1 large egg + one yolk room temperature
  • ½ cup unsalted butter melted and cooled
  • ½ teaspoon pure vanilla extract
  • cup rainbow sprinkles

Instructions
 

  • Preheat the oven to 350℉. Line two baking sheets with parchment paper and set them aside.
  • Mix the cake mix, egg, egg yolk, vanilla, and cooled melted butter in a large bowl until smooth and incorporated. Fold in the sprinkles.
  • Scoop cookie dough using a medium cookie scoop. Shape dough into balls using your hands. Place cookie balls onto the prepared baking sheets, leaving 2 inches of space between the dough balls. **Note: Chill the dough for 30 minutes to one hour before baking for less spread and thicker cookies.
  • Bake cookies for 10-12 minutes until set and lightly golden around the edges.
  • Allow the cookies to cool for a few minutes before transferring them to a wire cooling rack.
