– 8 cloves garlic peeled – 1 teaspoon extra virgin olive oil – 8 oz block feta cheese – ¾ cup non-fat Greek yogurt – 1 teaspoon lemon zest about 1 lemon zested – 2 tablespoon extra virgin olive oil – ¼ teaspoon finely ground black pepper – ⅙ teaspoon crushed red pepper flakes – salt to taste, if desired
Preheat the oven to 400° F. Line a baking pan with parchment paper.
In a small bowl, toss the garlic cloves in the teaspoon of extra virgin olive oil. Transfer the olive oil-coated cloves to the prepared baking tray. Sparingly sprinkle with kosher salt (about ⅛ of a tsp).
Roast for 20-25 minutes, stirring halfway through.
In a food processor or blender, combine all of the ingredients except for the 2 tablespoon of olive oil. Blend until smooth.
While blending, drizzle in the olive oil until emulsified. Taste and adjust seasoning, if desired.
Transfer to a serving dish and garnish with desired toppings.
