Toffee Chocolate Chip Cookie Bars

These cookie bars are addictively sweet! The mini chocolate chips and toffee bits pair perfectly with the blondie-style base for the ultimate cookie bar.

  • ½ cup unsalted butter melted
  • ¾ cup light brown sugar packed
  • 1 large egg room temperature
  • 1 teaspoon pure vanilla extract
  • cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • cup toffee bits I used Health Toffee Bits.
  • ¼ cup mini chocolate chips


  • Preheat the oven to 350° F. Grease and parchment line an 8-by-8-inch square pan.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In the bowl of a standing mixer, whisk together the melted butter and brown sugar until well incorporated. Add the egg and vanilla, mixing until combined. 
  • Pour the dry ingredients into the butter mixture and mix until completely incorporated. Fold, or stir, in the mini chocolate chips and toffee bits. 
  • Pour the batter into the prepared pan and spread evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. 
  • Allow bars to cool before slicing into squares. Store in an airtight container for up to 5 days.
