Farro Salad with Fruit and Honey Mustard Dressing

This farro salad hits all the flavor notes. The tart fruit pairs beautifully with the sweet honey mustard dressing. The hearty farro and spring mix complete this delicious salad!

Ingredients
  

Honey Mustard Dressing

  • cup olive oil
  • 2 tablespoon honey
  • 2 tablespoon apple cider vinegar
  • tablespoon dijon mustard
  • ¼ teaspoon garlic powder
  • salt and pepper to taste

Salad

  • 4 cups spring mix blend
  • 2 cups cooked farro cooled completely
  • 2 Granny Smith apples sliced into small wedges
  • 1 cup walnut halves
  • 1 cup raspberries

Instructions
 

  • In a small bowl, whisk together the olive oil, vinegar, honey, dijon mustard, and garlic powder until emulsified and well combined. Season with salt and pepper to taste, if desired. 
  • In a large bowl, combine the greens, cooled farro, apple slices, and walnuts. Pour the dressing into the mixture and toss until coated. You may not use all of the dressing, it depends on your preference.
  • Add the raspberries and gently toss to combine, so you do not crush the berries. Save a few raspberries for garnish.
  • Serve immediately.
