Cucumber Bites

These bites are all the goodness of cucumber sandwiches minus the bread. The cucumbers marry perfectly with the goat cheese chive cream on top.

Ingredients
  

  • 1 English cucumber sliced ½-in thick
  • 4 oz goat cheese
  • ½ cup plain Greek yogurt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ cup chives diced small; plus more for garnish
  • 5 each Kalamata olives halved for garnish; or as desired

Instructions
 

  • In the bowl of a standing mixer with the paddle attachment, combine goat cheese and yogurt. Whip until fluffy and no cheese lumps remain. Add seasoning and diced chives, mix until well incorporated.
  • Place cheese mixture into a piping bag (or zip-top bag with the corner cut off.) Pipe a small amount of the cheese mixture onto each sliced cucumber, garnish with chives and/or a halved Kalamata olive.

Notes

  • Cheese mixture can be mixed by hand as well, but make sure to whip cheese mixture until no lumps remain. 
  • Alternative garnish: halved cherry tomato
