Easy Strawberry Cheesecake Fluff

Ingredients
  

  • cups heavy whipping cream cold
  • ¼ cup powdered sugar sifted
  • 1 teaspoon pure vanilla extract
  • 8 oz cream cheese softened
  • cup strawberry preserves
  • 1 cup fresh strawberries sliced into small pieces
  • 1 cup mini marshmallows

Instructions
 

  • Whip the heavy cream in a large bowl until soft peaks using an electric mixer. Next, add the sifted powdered sugar and vanilla extract. Whip until stiff peaks have formed. Transfer the whipped cream to a separate bowl.
  • Whip the cream cheese and strawberry preserves in the same large mixing bowl with the same whisk attachment (no need to rinse) until light and fluffy.
  • ​Carefully fold the whipped cream into the cream cheese mixture using a rubber spatula. (Reserve ¼ of the whipped cream for garnish.)
  • ​Gently fold the marshmallows and strawberry pieces into the cream mixture.
  • Cover the bowl with plastic wrap and chill the fluff in the fridge for 2 hours. Serve with the remaining whipped cream and additional fresh strawberries.

Notes

  • For the best whipping results, place your stainless mixing bowl and whisk attachment in the fridge or freezer. Make sure that your heavy whipping cream is cold.
