Ingredients

– 1 lb dried cellentani pasta or your favorite pasta – 8 oz block of feta cheese – 3 cloves garlic sliced thin – 1 shallot minced – ¼ teaspoon crushed red pepper flakes – ½ cup olive oil – ⅓ cup reserved starchy pasta water – 2 cups cooked chicken use grilled, rotisserie, or boiled – freshly cracked black pepper to taste – For Garnish: grated parmesan cheese and fresh parsley

Preheat the oven to 400° F.

Place the block of feta cheese in the center of an oven-safe dish. Sprinkle the sliced garlic, minced shallot, and crushed red pepper flakes over the cheese. Drizzle the olive oil over everything.

While the feta is baking, cook the pasta according to the package instructions until al dente. *Reserve ⅓ cup {or more} of pasta water.

Off the heat, return the pasta to the pot. Pour the feta mixture and starchy pasta water into the pot with the pasta. Toss until everything is coated. Stir in chicken and season with black pepper.
