Cookie season is almost through, Christmas is upon us. Though I’ve already finished my holiday cookie baking, granted that I had to get them in the mail before it was too late, I have a quick easy recipe for those of you who are last-minute bakers. With Thanksgiving so late this year, this holiday season seemed to go by entirely too quickly. Thankfully, I was able to get all of my holiday shopping and baking done in time. This left us time to build a gingerbread house while enjoying holiday-inspired lattes and Christmas movies. We’re keeping it simple this year. Tomorrow we’re planning on going out for a nice breakfast. Dinner will entail a rack of lamb with all the fixings. Christmas will be spent at home, started with gift opening and yummy breakfast, and maybe just some leftovers for dinner before going out to see the new Star Wars movie. I am grateful we both have some time off of work to spend together.
This year I decided to make one time-consuming cookie recipe, and three simpler ones. For the first time ever, I made Kolaczki cookies, raspberry and apricot. Boy there are some work, especially when you don’t have a square cookie cutter. But, all the work paid off. They turned out delicious. In addition to those, I made vanilla crescents, chewy ginger cookies, and these mocha almond balls. These are the kinds of cookies you only have at Christmas time.

These mocha almond balls could not be easier. You can whip up the batter in minutes, scoop and bake. While still warm, roll these mocha almond balls in powdered sugar. Though chocolate, they hold the appearance of a snowball. And, gosh darn it, they are so good alongside a cup of joe.
