Chocolate. Cream Cheese. Sprinkles.Brownies. Do I have your attention yet?
Chocolate can make any day better. It just makes you feel good. So good, that it actually provides many health benefits too. And thank goodness for that, because there is always an excuse to eat chocolate. In fact, I am eating chocolate as we speak. It is the perfect accompaniment to coffee and blog writing.
After a busy day of walking around and exploring, I am feeling perfectly at ease writing, sipping on an iced americano and eating a Toblerone chocolate bar. It is in these moments that life seems to slow down. And this slow down is much appreciated after a busy past week. We just got back from a little city exploration, a lot of walking and a nice lunch. Before the work week begins again, I am enjoying this little moment of slow down, equipped with chill electronic music, the buzz of the air conditioner, and my currently calm sensibility.
Brownies are one of the best ways you can eat chocolate.
That may not be a proven fact and just my personal opinion. But I think many would agree with me.
We had brownies quite often in my home growing up. There is no possible way I could make a tray of brownies as good as my mom makes, however, I can make a pretty darn good cream cheese batch. Layers of cream cheese, brownie, and ganache combine perfectly into one epic bite. The sprinkles add a nice visual touch.

Cream Cheese Filling
- 8 oz cream cheese softened
- 1 egg yolk
- 4 oz heavy cream
- 1/2 cup butter
- 2 oz semi-sweet chocolate roughly chopped
- 1/2 cup sugar
- 1/4 cup cocoa powder
- 1 whole egg
- 1 egg white
- 1 tsp pure vanilla extract
- 1 cup all-purpose flour
- 3/4 tsp baking powder
- 1/8 tsp Salt
- 6 oz semi-sweet chocolate roughly chopped
- 1 tbsp corn syrup
- 6 oz heavy cream
